When the infamous ban on Absinthe was lifted in 2007, whom else besides America's premier distilling group St. George would craft the very first legal American absinthe? Absinthe is based on the trinity of wormwood, fennel, and anise. Infused with an estate-made brandy, the botanicals are distilled in a 1,500-liter copper pot still. As with all 'Verte' Absinthe, the spirit is colored green in a secondary infusion of fresh herbs, such as mint, tarragon, basil, lemon balm, hyssop, and nettle. A deep herbal profile, lead by fennel and anise mix perfectly with the lemon and citrus forward sip. While the sugar cube drip preparation is heralded as the way to truly experience Absinthe, I find this unique spirit expresses itself perfectly over ice.
