The bitters section of most people's home bar is usually limited to a bottle of angostura and maybe an orange bitter. It's a shame because if you are into making cocktails at all, a dash or two of an interesting bitter is greater than switching brands of gins or playing with garnishes in terms of transformative power. The smoked chili from Hella Bitter, which has even more smoke and capsaicin heat then you're probably expecting, is actually one of the more versatile and playful options out there. There are some obvious cocktails: throwing it into Margarita (mezcal or tequila based) is as amazing as it sounds. It can go into a Bloody Mary with a pinch of black pepper for some added kick. It can even up the savory edge in a dirty martini. And my favorite: adding it to hot chocolate in the winter, sometimes with an added shot of Chartreuse.
