This bottle is a small miracle. Developed by renaissance woman Cheryl Lins in 2009 following the lift of America's absinthe ban in 2007, it was New York's first distillery devoted to the spirit, and still one of the very finest available anywhere. Lins sadly passed away in 2021, but her devoted team has kept the project going with the very same methods & recipes. At 68%, this absinthe has an unexpectedly lithe and fresh style with really expressive aromas and flavors of mint, licorice, dark chocolate, star anise and mint. The flavors suggest some sweetness but this spirit is absolutely dry and refreshing. A beverage that is the period to your day's sentence. Skip the sugar cube on this one.
