Absinthe has a long history that makes it seem mysterious, romantic and even taboo. I'm sorry to tell you that there is no green fairy. Absinthe doesn't cause hallucinations and it will not make you go mad. The anise based spirit originated in France and Switzerland and should be consumed as an apéritif, being watered down to the strength of a glass of wine. There is a wonderful ritual of melting sugar over a perforated spoon with ice-cold water, but some absinthes, like Cheryl Lins' Meadow of Love, have enough innate sweetness to skip the sugar and just add water. There is also never a need to set your sugar cube on fire. By adding water to Meadow of Love you release delicate florals like rose petals amidst the strong anise backbone. The liquid becomes milky and each sip unlocks deeper and deeper flavors.
