Le Rocher is produced by Distillerie Bethel Romelus in the village of Pignon, in the Nord region of Haiti and the use of local heirloom cane, completely wild fermentation the high esters that produces and the small scale pot distillation make it one of the most distinctive spirits on the shelf - truly artisanal. The tropical and slightly funky notes include - pineapple, aloe vera, bell pepper and earthy honey.

With the Clairin Le Rocher, Bethel Romelus creates a rum that may overwhelm you with a variety of sensations. It’s sweet, savory, briny, smokey, creamy, and bitter all in each sip. The flavors peek at different intervals. The finish is strikingly long and the aromas are potent. It is a challenging tasting experience and not for the simple minded or faint hearted. Romelus adds the liquid waste (dunder) from prior distillations to the fermentation and distillation. The process adds flavors and textures and the estery funk that I personally love in rums. Either enjoy neat or keep it very simple with a squeeze of lime and a splash of syrup.
