Ohyama Brewery in the Yamagata Prefecture makes a beautiful and refined junmai daiginjo. Lively fruit notes are bright and refreshing on the palate and the mouthfeel is silken. It almost comes across as sweet, but it maintains excellent balance and would pair well with salmon or tuna sashimi or lobster ishiyaki.
