Clotilde Davenne is one of the greatest Chablis producers in France. Her white wines sing with freshness, purity, and elegance while having a personality that speaks to her care of the land. She is after all known as “Burgundy’s Daughter”! But it is her sparkling wines that often times are hidden next to the Champagne aisle. These are not to be missed. Grown on the same prized Kimmeridgian limestone riddled with fossilized oyster shells just outside of Chablis, her blend of Pinot Noir and Chardonnay combine to create the ultimate Crémant de Bourgogne. Being an extra brut, it is incredibly dry, but the wine sings with notes of white flowers, fresh citrus, and green orchard fruits. Eighteen months of lees aging before disgorgement add the perfect roundness to the wine with just enough breadiness to compliment the fruit. A masterpiece!
