Tasting Notes

A very classic Ribolla Gialla. Plush with yellow plum skins and textured minerals on the palate, one is initially taken in by effusive aromas of pear and acacia on the nose. Fuller in texture with orchard fruit acidity, this wine marries well with an array of dishes. Try with white fish appetizers, cod fish croquettes, and Parma ham. This tasty wine is also fine on its own as an apéritif.

From a steady push-pull of warm air off the Adriatic and cool breezes from the Alps, the climate in Friuli Colli Orientali benefits from a kind of natural air conditioning system, one that permits a gentle and even ripening of the grapes while preserving their mouthwatering acidity. This is prime land, hugging the Slovenian border, limestone rich, nutrient poor, steeply sloped to catch every ray of available sunlight and stave off humidity. Oak aging is eschewed by this producer, but the wine sits on the lees for three months, imbuing it with a golden hue, pleasing texture and complex aromas of lemon curd, yellow apples and green mango. Pile the Prosciutto di San Daniele 750 ml high and work your way down accordingly.
