Wonderful memories come flooding back when I think of my visit to the Black Dirt Distillery back in the fall. The timing was ideal. Apple picking and tasting spirits patiently aging in barrel are hallmarks of the season. When entering the distillery, a beautiful, classic, Louisville Vendome still greats you from across the still house. No "hurry up and get it into market" approach for this outfit--the size and quality of their aging barrels indicates their patience and seriousness of craft. Deep, ripe, spiced apple notes dance on the nose inviting you in for more. They use 100% New York apples and bottled in bond. High quality and expert execution. Calvados fans, take note!
