Wonderful memories come flooding back when I think of my visit to the Black Dirt Distillery back in the fall. The timing was ideal. Apple picking and tasting spirits patiently aging in barrel are hallmarks of the season. When entering the distillery, a beautiful, classic, Louisville Vendome still greats you from across the still house. No "hurry up and get it into market" approach for this outfit--the size and quality of their aging barrels indicates their patience and seriousness of craft.
