Originally, this term was used to classify high quality Tuscan wines that fell outside the parameters set forth by the DOC. Now, however, the term can apply to virtually any wine from Tuscany which chooses, for one reason or another, not to fall into one of the DOC classifications (such as Chianti). Super Tuscans can be 100% Sangiovese, or they can be blends of any number of indigenous or international varieties. These wines are meant to be cellared, as they are often heavily influenced in their youth by their oak aging. If you want to drink one anytime soon, be sure to decant it for at least a few hours - these giants need time to breathe!
