Made from the local white grape called Menu Pineau. Brin de Chèvre, or "goat's hay", comes from 2 parcels, one planted in 1937, the other in 1950. As for all Tue Boeuf whites, Brin de Chèvre fruit is pressed directly in whole clusters and allowed to ferment spontaneously with native yeasts and without SO2 in large oak tanks. A fuller-bodied, rich white wine that's dry on the palate and will make for a stunning match with a cheese plate.
