Staff Pick Notes

The Imanishi Seibei Brewery was established in Nara in 1884, and they still hold true to their founding philosophy: “polish the rice, polish the water, polish the technique, and polish the mind.” They are best known today for their Harushika brand, a name that references Nara’s famous sacred deer. Nara is also recognized as the birthplace of the modern, refined style of Japanese saké. As approachable as “Sakura” is, the refinement is not lost. This is a friendly and versatile saké that would please a range of palates and complement a smorgasbord of dishes. Fleshy tropical fruit is balanced with vegetal notes, a soft umami sweetness, and bright acid—a combination that I can only describe as thirst-quenching. I would open this alongside raw botan ebi or a barbecue feast with equal enthusiasm!
