Patrick Piuze creates Chablis worthy of admiration. His Bougros carries leesy weight, with powdery minerals dusted atop a firm texture. The flavors are honeyed, quietly brooding with buckets of Mirabelle plums on the palate. An unctuous finish closes the experience, making this wine extremely memorable. Chablis is meant for a meal. Suggested options are any roasted bird and rich buttery gravy or creamy west coast oysters or other firm seafood, like lobster, cod, and halibut. Alternatively, it will cellar for many years. Piuze's Bougros is fermented and aged in six-year-old barrels and the vineyards are 39-years-old. They are situated on a steep, south-facing slope that reveals bluish gray clay.

As a young adult, he met Marc Chapoutier. The famous vigneron from Southern Rhône changed his life. With his help, Patirck gained his first viticultural experiences.
