Junmai Daiginjo is widely considered to be the most refined and premium grade of sake. To reach this classification, each grain of rice going into the brew must be polished down to 50% of its original size, leaving only the white, starchy heart, or "Shinpaku," behind. Using 100% Yamada Nishiki rice along with the soft water from natural springs of the Iwate Prefecture, Nanbu Bijin have crafted a Sake that exemplifies the balance between gorgeous ginjo aromas and the freshest melon and pear flavors of Yamada Nishiki, the highest regarded sake rice. Nanbu Bijin celebrated its 120th anniversary in 2022. For 5 generations the Kuji family have upheld the motto: “Quality Above All Else”
