This artisanal mezcal hand crafted by mezcalero Cosme Hernandez is made from Espadín agave plants harvested from very high altitudes, fermented in traditional pine wood vats, and double distilled in tiny pot stills. The perfect clarity of the spirit foreshadows the purity in the aromas and flavors, of which there are many. Coming in waves are notes of clean white smoke, green peppercorn, key lime, minerals, wet stone, aloe, sweet nectar and more. Sadly, there is no more of this to be had and once this sells out it is likely gone for good. Get it while it lasts.

Alipus represents various mezcaleros from various towns in Oaxaca. Their collection is hard to equal in terms of quality for price. San Baltazar is a town 4000 feet in elevation with rocky shale soils. Cosme and Cirilo Hernandez are the father and son who painstakingly produce this spirit from traditional methods. If you want to dive into the world of Mezcal, here is a good place to start. This Mezcal is unmistakably soft and approachable. Smoke is moderate and fruity aromas and flavors are showcased. It also shows great minerality and a touch of vegetal flavors. It’s a mezcal that is also great for mixing, as smoke won’t dominate the drink as with many Mezcals. It is Alipus' best seller in Mexico, so availability in The States is limited.
