The line between "natural" and conventionally made wine is more a question of what goes on behind the scenes than what you get in the bottle. Many natural wines are funky, cloudy, and full of sediment, but truthfully, these are stylistic decisions made by a winemaker more than something inherent. I think of an acoustic recording of a famous song—it sounds intimate, raw, and real when you can hear the squeak of their fingers across the fret, but if you want that sound on the final recording you actually have to go out of your way to mic the neck of the guitar. Bottles like the Sulauze here are some of my favorites. This is an unsulfured, whole-berry Syrah from biodynamic fruit, and it is accessible, clean, and pure. Aromatic, nicely tart, with lovely red fruit, dried herbs, and leather on the palate. A perfect red to go with fish.




We'd like to clear this up once and for all: the Shiraz grape is genetically identical to Syrah. Australian winemakers put "Shiraz" on the map (and, many would argue, vice versa), and the term is now used throughout much of the New World. Let it never be said, however, that Shiraz and Syrah are the same thing: the region in which the grape is grown determines much about the flavor of the wine it will produce.
