Why isn't there a lot of organic saké in the beverage market? Because Japan is one of the world's largest users of pesticides. This saké is made from Omachi rice, a variety discovered in the Okayama prefecture in the 1860s, unique because it is not a cross-bred variety. In addition, this rice is grown using the Kimura method, a Japanese organic farming philosophy developed by Akinori Kimura hinging on these ideals - chemicals should never be used and the healthy balance of naturally occurring site-specific organisms is crucial to soil maintenance and healthy crops.
