Aoki Shuzo of Niigata makes a very clean styled Umeshu Junmai Ginjo. With an unusually aromatic nose for a daiginjo, there is a tart sour nose as well as bouquet of lily, amaretto, and sage herb. The palate is fruity with reserved sweetness. An outstanding, complex plum saké. Enjoy straight or on the rocks.
