This lovely family owned distillery is currently run by Master Distiller Flavio Calvetti, the third generation since his grandfather started making this regional specialty in 1948. Named after the Herbetet peak of the Grand Paradiso mountain in between Aosta and Piedmonte, the family carefully sources the genepy that proliferates here that infuses this regional specialty with its trademark bitterness. Meant to be served ice cold out of the freezer after a day in the snow or as a digestif, this will work equally well in numerous cocktails.
Genepy (or génépi) is named for the Alpine flower (a relative of wormwood) that gives the liqueur its distinctive bitter profile. The character is herbal, sitting halfway between Green Chatreuse and absinthe, though it's floral without any trace of anise. As you drink it, you'll find flavors of mint, lavender, and even rosemary. I usually enjoy it the traditional way: as a digestive, neat, and very, very cold. For mixing, it works well with gins featuring a cucumber botanical like Hendrick's and Uncle Val's. I like it equal parts gin and genepy, for a strong and bracing drink that's balanced by genepy's inherent sweetness. Or, you can add the combo to lemonade for hot, summer days—and a basil leaf garnish really makes it sing. It even works shockingly well in any cocktail featuring hot chocolate, or chocolate bitters.
