Located in the mountainous Gifu prefecture of Japan, Nakashima Saké Brewery has been functioning since the early 1700s. The Kozaemon brand focuses on the “umakuchi” style of saké that aims to perfectly balance the experience of sweet, dry, and umami flavors, and has been a fixture internationally, as well as in Japan, since 2001. Two varieties of rice, Yamadanishiki and Aiyama, are mated with the pristine water from nearby Mt. Byobu. The saké is brewed and then matured at low temperature over the course of two years, a very long time for a saké. Kozaemon Daiginjo is the personification of elegance: highly fragrant with notes of perfectly fresh Fuji apple, subtle acidity somewhere between quince and dried pineapple, and an airy and clear finish. This Diaginjo is the ideal pairing for Sashimi or delicate appetizers.
