Daiichi Brewery has been both growing their own rice and crafting sake from it since 1673. Tochigi prefecture's oldest kura makes use of the region's pure water. Yamadanishiki rice is polished down to 38% and is bottled undiluted using only gravity to press out the sake, Rare and luxurious, this will pair well with raw oysters with yuzu kosho mignonette.
