Forget about the Barolos from Cavallotto as you already know they're great. However, what really gets us going is his Grignolino, entirely unoaked, from high elevation old vineyards, and just as charming as they come with lithe red berried and floral fruit and a delicate yet tense dose of tannins that's so common for the small berried grape.

If you’re finding it hard to make a decision between the plethora of bottles on display here, pick this. It’s soft, juicy, and goes down so easy. It’s a crowd pleaser from a landmark organic vigneron Cavalotto. They own almost the entirety of the Bricco Boschis Vineyard whose Nebbiolo makes some of the great age Barolos. Small parcels of Bricco Boschis are dedicated to other grapes such as Dolcetto, Barbera, Chardonnay, Freisa, and the Grignolino that fills this bottle here. There are flavors of sweet cherries, fresh strawberries, fresh cut herbs, and earl greay tea. Put it in the fridge for 20 or so minutes before opening. Always have a bottle around, as it is a godsend after a hard day of work.

Piedmont

The most famous grape in Piedmont is the noble Nebbiolo, which makes the long-lived Barolo and Barbaresco. Grignolino

The Grignolino grape derives its name from grignole, meaning "pips." This small-berried red variety makes some truly intriguing wines, because the grapes produce very little juice in proportion to the amount of pips and skins. These elements, combined in these proportions, yield deliciously earthy wines that are pale in color (often resembling Beaujolais), and unexpectedly tannic. 

Cava

Dry, delicious Cava is an excellent Champagne alternative. The best examples are aged on the lees (the spent yeast cells used in fermentation) and show complexity to rival that of the best Champagnes.
