I’ve ruined too many wines by launching headfirst into the hazardous surgery that is opening old wine with a standard corkscrew. There are a number of pitfalls when opening old wine. The cork can rip in half, fall into the wine, cling to the neck, or simply crumble to pieces. A Durand uses the corkscrew as a spine to keep the cork in one piece while the pronged opener gently eases it out.
