Alipus is a family of carefuly selected premium artisanal mezcals, hand-distilled in family distilleries in rural pueblos in the state of Oaxaca, in southwest Mexico. Since 2004 Grupo Los Danzantes has been partnering with artisanal mezcal producers to celebrate the craft of distillation and the various terrior within Oaxaca. Minerva Hernandez Melchor, one of the few females in mezcal business, oversees her family's production in Rio Hormiga Colorada at an altitude of 1000 to 1500 feet. This bottling of Espadin truly allows the flavors of the Agave to shine. Aromas are bright and clean. Green, vegetal and slightly minty flavors mingle on the palate with well balanced hints of smoke. This bottling of Alipus is elegant and light on its feet. It's a great place to start if you have not yet explored artisanal mezcal.
