Yamada Shoten "Everlasting Roots" Tokubetsu Junmai Sake

The Yamada Shoten brewery was founded in 1868 and has remained in the family for 6 generations. Even with this longevity it remains a tiny operation with just one master brewer, Masaki Uno. The brewery is situated 800 meters above sea level in the Gifu prefecture. Only the local strain of hidahomare rice is fermented. Their one bottling that is imported to The States is this here Everlasting Roots. It is only bottled in a generous 900ml bottle (go invite the friends). Fruit flavors of pears and melon show with a slight funk of cultured cream. A touch of smoke and grass will also hit the palate. The texture is a bit grainy upon opening, but smooths out in subsequent days. Lovely with any salad with fruit and nuts.
