Rum is, in essence, the wild west of the spirits world. There aren’t a lot of regulations protecting its integrity. It can be made anywhere and adulterated with almost anything. So it’s not always easy to find rums that aren’t just snake oil. Jamaica has a great variety of rums that has only widened in the age of modern production. However, Monymusk is an old-school operation that is seeing a resurgence in the U.S. Their rums balance sweet and earthy flavors effortlessly. Taste tamarind, glazed pineapple, bay leaf, mild tobacco, tropical fruit leathers, and salted plantains. There’s no school like the old-school.
