This sake has been aged for 15 years and shows an amber, golden color. Nama, Kimoto, Muroka. It is rare to find aged sake and extremely rare to find aged nama sake. The Toji believes that his nama sake can be aged for years like a fine wine and that they get better with time.

“Fermentation is a process of continuous change,” is the mantra that inspired Keisuke Terada, 23rd gen head of Terada Honke, to shift his brewery into a ‘natural’ sake brewery using all organic rice, wild yeast & koji spores, and bamboo & wooden vessels in place of modern machinery. This mantra still represents Terada Honke Brewery, now run by 24th gen Masaru Terada - it is a place that emphasizes joy & transformation for over 350 years. This Kaikoshu Junmai 15 YEAR (!) aged sake is the crown jewel of their lineup, showing just how beautiful change can be. This sake ages & develops sherry-like notes of clove, soy sauce, tobacco, baked orchard fruit, pastry, and a delicate balance of sweet caramel and spicy chili. Truly a masterpiece, pair with dessert course or enjoy it slightly chilled and appreciate the change in experience as it warms.
