The beautiful, idiosyncratic rhum agricoles from the island of Marie-Galante, Guadeloupe are absolutely worth seeking out. Pere Labat is the brand of rum distilled at Distillerie Poisson, which houses one of the oldest Creole column stills dating back to 1955. As a country with its own GI (geographical indicator), they adhere to certain practices and standards in their production. Entirely made of sugar cane, this rhum blanc is distilled at a 3-day fermentation and rests in open-top foudres for up to 2 weeks before being proofed down to 59%, the locals’ preferred proof. A very cleanly mineral-driven (German Mosel Riesling anyone?) spirit with notes of hibiscus, petrol, rock candy, spearmint, and grilled melon that is precise yet full of vigor.
