Although sourcing wild agave is a common practice for mezcal/agave spirit production, there are producers who also cultivate their own stocks. This creates a symbiotic relationship between the palenquero and the natural terroir they work within. This Tobala from Tomas Garcia Cruz and his sons is a prime example of that; it’s a varietal that they only planted six years ago that now thrives in their part of Miahuatlán. The wild Tobala usually matures within 12-15 years, but this cultivated production has, in my opinion, so much in the way of personality and elegance that Tobala is known for. An evocative bouquet of strawberry shortcake, juicy fruit gum, orange sorbet, manuka honey, hibiscus, and a clean mineral finish that has me mesmerized, which is a testament to Tomas' craft and connection to the land.
