One of the great things about gin is the creative possibility open to each distiller. No other spirit offers so much room to experiment, essentially serving as a blank canvas for personal expression. For Hillhamm Salome, one of Mexico's few female distillers, the aim was to channel the essence of her native land, and more specifically, its sunshine. Along with a gentle touch of juniper, she uses locally sourced prickly pear, orange blossom, raspberry, coriander, and lime zest. It's an elegant, more subtly flavored gin that would make an excellent martini, but could still hold its own in certain cocktails, say a gimlet or French 75.
