From one tiny vineyard close to Bilbao, this family winery does everything on the micro level. Using only the native varities Hondarrabi Zuri, Mune Mahatsa, and Txori Mahatsa, Spontenaous fermentation with native yeast, and the juice spends 2 hours on the skins. This still white wine is bottled without any carbonic gas, and is extremely traditional in style. Pair with salt cod fritters.

Txakoli wines are not only light and spritzy as most of the buzz would suggest. There are actually three distinct subregions within Txakoli that make differing styles of this uniquely Basque delight. This bottle is from the Bizkaiko Txakolina DO, which is made up of small plots between the city of Bilbao and the bay of Biscay. It has more weight and roundness on the palate than you would guess from the label. It's also gorgeously toned with yellow fruit and apple notes. There is no effervescence, but it does show off a strong back bone of acidity. This wine is delicious with or without food. Pair it with a seafood salad or charcuterie and crunchy bread. Topa!
