Alexander Rainer is a man of singular vision: to make the best possible eau de vie using only the finest fruit picked at peak ripeness. It's a time-consuming, labor-intensive endeavor, but one that yields the most exquisite brandies you'll every try. His latest release is a 40th birthday present for his wife, Annia, who happens to love gin and tonics. The base spirit is his Gravenstein apple eau de vie that's been aged in glass demijohns for 10 years, which he then re-distilled with nothing more than juniper. That's it. Two ingredients. Only the most exacting distiller could pull off such a feat and produce a spirit with such purity. The scent evokes a walk through a pine forest in the winter, while a touch of apple stem comes though on the palate. It's crystalline, cool, textural, and unlike any gin you'll ever have.
