From the famed Albariza soils of Jerez comes this unfortified white made entirely from Palomino. Once an abandoned estate owned by a British merchant, the bodega is named in honor. Fermentation takes place in stainless steel, and the wine is aged on the fine lees in tank for an additional 5 months. This is a very different expression of Palomino, but the impact of these soils shines through. Pair this medium-bodied dry white with hake soup with orange and olive oil.

Jerez

Sherry actually gets its name from our anglo-inability to pronounce the word “Jerez,” the town at the southern end of Spain in which the wine is produced. Like Champagne, Sherry can only be called Sherry if it comes from this specific region. That said, there are other “Sherry-styled” wines worthy of note produced outside of the Sherry D.O. (known as vinos generosos). Montilla, lying to the north-east of Jerez, produces some of the finest Pedro Ximénez in the world.

Palomino

Accounting for over 90% of the vine plantings in Jerez, this relatively neutral grape provides the ideal “blank canvas” for the creation of fabulously complex Sherries (much like the Ugni Blanc grape does in Cognac).

Blanco

White tequila, an official type (tipo) for tequila bottled fresh from the still, or allowed to rest in stainless steel tanks for up to sixty days before bottling. It is never aged in wooden barrels. Also known as plata, plato, and silver tequila. Usually the most robust, strong-flavoured of the tequila types.
