Pal'alma Sonora Lechuguilla Mezcal

Saline. Savory. The waning embers of a campfire. Those were my first impressions of this stellar spirit. That was before I tasted it. The subtle, earthy nose unfurls into a completely different flavor profile. The palate is much more fresh and fruit forward than the nose suggests. This distillate hails from Sonora, not exactly the center of the bullseye for agave aficionados. It doesn’t quite fit into the Mezcal D.O., but if something this delicious and unique doesn’t play by the rules, who cares about official designation? Super small artisanal production, fermentation of Lechuguilla in a rawhide sack, and ‘Filipino style’ double distillation in clay pot stills all add to the distinct individuality of this gem.
