South of Kutaisi, the former capital of the Kingdom of Georgia, lies the Tarasi Minadze winery in the village of Persati. This Tsolikouri, an important grape in Imereti, is treated very lithely. Only 10% of the wine sees about 10 days skin contact, and the rest is all direct press. It then spends 8 month in qvevri. Fresh, with stone fruit and savory aromas, this lets the fruit shine through with just a hint of tannic structure. Pair with chicken kharcho.
