This minimal intervention, gravity fed, low energy use winery project is helmed by Pia Carrau, the 10th generation in her family to make wine. A blend of Trebbiano and Malvasia, this is fermented with native yeasts, and is bottled unfined, and unfiltered. A dry sparkling white wine that pairs well with mezze and choripan.

Staff Pick Notes

Pet-Nat from Uruguay? Oh yes. And it is delicious. I love the combination of Trebbiano and Malvasia. Trebbiano provides body and texture, while Malvasia brings the jolt of aromatic oomph. Add the bubbles and now we're really cooking. It'd be easy enough to call this an easy drinker, but it wouldn't do this wine justice. Delightful, refreshing, lightly dusty but juicy with notes of stone fruits and white flowers - this would optimally be shared outdoors, but you'd be just as happy with it accompanying dinner for one. Castel Pujol has been making terroir-driven wines in Cerro Chapeau since 1970, and has been trending towards making wines with lower intervention in the cellar ever since the youngest generation of this winemaking family took the helm in 2018. I can't wait to watch the continued innovation from this team!
