An unfortified Palido from the Gomez Nevado estate in the Sierra Morena mountains of Northern Andalucía. This blend of Palomino, Arís, and Pedro Ximénez has a lot in common with a fino sherry, but is from a different region that follows its own traditions. Palido means pale, and refers to a local style of flor-aged unfortified wines. This particular bottling has been aged for a shorter span of time, 3-4 years, resulting in a fresher and younger tasting white wine. Pair this salty dry wine with shrimp and fideos.

Nick Africano loves sherry wines so much that he has dedicated part of his life to sourcing, bottling, and importing wines from small, tradition-keeping wine growers throughout Andalucia. Nick discovered Nevado in the bars of the town of Villaviciosa. Until now, the wine has been rare to find in Spain, much less the United States. He worked with Bodegas Gomez Nevado for an exclusive bottling. The vines are farmed organically on clay-slate soils at 500 meters elevation. It is an unfortified, flor (a layer of yeast) aged wine that shows rich flavors of hazelnuts, ripe apples, and fig. It is marked by a savory umami effect and bracing acidity. The layering of flavors and length of palate is remarkable. Serve with cured Jamon Iberico and Manzanilla olives.
