Khkhvi is a rare grape in Georgia, but it produces some of the most complex and interesting amber wines of this great nation of vintners. Kakheti is its homeland, but its origins are still something of a mystery. Dry medium-bodied, with medium structure, this boasts heady aromas of apricots and herbs. Pair with poached fish in pomegranate sauce.

Production Methods

Natural

Wine made from organically or biodynamically grown grapes with minimal intervention avoiding the use of chemicals, additives and technology.

Orange Wine (Skin Contact)

Orange wine is made by using white wine grapes, which are pressed and left in contact with the skins, seeds, and stems for an extended period of time, similar to how red wine is made.

This prolonged maceration extracts color, tannins, and phenols, giving the wine a darker, sometimes orange color. It also produces a wine with more structure and intense flavor.

Maceration times can vary between a few hours to many months, with longer contact giving more color and extraction.

And after opening the wines from Qvevri Wine Cellar, you are surely to see why with this one! Khikhvi is a delicious and thought provoking grape indigenous to the Kakheti region in Eastern Georgia, with balanced acidity and smooth tannins. When left underground in the clay Qvevri for up to 7 months, a metamorphosis takes place within the liquid. The skins bring a beautiful amber hue to the wine, and with it aromas and flavors of wildflowers, honey, and juicy apricots. If you are able to pair with these wines with the cuisine of Georgia, be ready to be blown away. Look for a dish such as Satsivi, which mixes chicken in a garlic walnut sauce with Georgian spices.
