From 30 year old vines planted at 300 meter elevation in iron, chalk and clay-based soils. Named after an ancient winemaking practice of submerging the cap for 90 days prior to racking. Aged for 4 years in large Slavonian oak casks before bottling. The Giacomo Fenocchio estate is one of the staunch traditionalists in the region. Their wines are about lelegance and pedigree all at once.
