Sourced from a fellow winemaker very close to the Fordori estate, the Pinot Grigio is hand-harvested, destemmed, and the grapes go into clay amphorae for up to 8 months. It sees a brief stay in used acacia barrels before bottling. Pair this structured dry skin-contact white with roast pork and pear mostarda.
