To describe the essence of Barney Wilczak's eaux de vie, I would say is the balance of terroir, purity, and intensity. Between a slow yet long fermentation with wild yeasts, precise distillation, and using only the most immaculate of fruit, Wilczak aims to showcase what nature has provided to his British homeland. All fruit is picked at peak ripeness, cleaned and graded before fermentation and the amount of fruit that is needed for this endeavor is mind-boggling, approximately 100 pounds of fruit for a liter of distilled spirit. The Raspberry is breathtakingly concentrated, assertive with beautiful floral notes such as rose hips and hibiscus, raspberry kisses, lemon zest, and an emphatic finish full of fruit pits and nuts. Capturing a sensation as gripping as this without any shortcuts or compromises - truly incredible.
