As with all bottlings from this producer, the attention to detail is taken to the next level to assure a superior spirit in every facet. Estate grown purple sweet potatoes are hand harvested and hung from rafters to aerate and dry, transforming and concentrating the flavors. The potatoes are eventually steam cooked and fermented with a special koji rice prior to distillation. Every drop of this release comes from the 2020 harvest.

Honkaku Reserve’s Floating Moon is from a single harvest and sports a handwritten bottling date on its back label. It’s an excellent representation of the Japanese ethos: reverence for tradition coupled with brilliantly subtle innovation; using the past as a springboard for the future. Pot distillation renders pronounced aromas, exuding grapefruit zest, pomelo, white pepper, crisp apple, and citrus blossoms. The palate is a touch more restrained, but no less complex. It’s one of the most exciting things to cross my lips in a while. Is this out of the ordinary? Perhaps. Should you be drinking anything less?
