Akabu, "Gokujo no Kire" Junmai Daiginjo

Established in 1896, the Akabu brewery was completely leveled by the Tohoku earthquake in 2011. It was rebuilt with the young toji Ryunosuke Furudate at the helm, and is now considered one of Iwate's finest kuras. Local Yuinoka rice is polished down to 35%, and the brewing takes place over the coldest period of winter. Pair this dry sake with raw scallop in yuzu oil.
