A majority of the fruit for this cuvée comes from the Stiling Vineyard, whose grapes were picked in several passes to maximize both ripeness and acidity. A small portion of Fallenleaf Vineyard and Green Acres Vineyard were included as well. Barrel selection is paramount for this cuvée, with just the right amount of oak influence. Pair with braised chicken thighs in soy and star anise.
