A gorgeous white Burgundy that comes from a single .3 hectare-sized plot in Marsannay at the bottom of the slope. Fermented with native yeasts and then aged in older, more neutral barrels for a year before bottling. A delight to pair alongside gougères and other appetizers.

I don’t usually go on and on about the color of wines but this one is pure sunshine, radiating back to us all the solar energy that went into its creation in one perfect sunset. It’s really no surprise though, Sylvain Pataille and his brother Laurent produce incredible wines, it’s in their blood. They’re Burgundy natives who’ve had every job you possibly can in wine-making while growing up, and they’re both trained oenologists whose expertise is in high demand all over France, and drinking this wine, I can really understand why. They practice low yields, work biodynamically, plough by horse, these guys are the real deal and so are their wines. This one is 100% Chardonnay, single site, brought to us by indigenous yeast and older oak barrels for twelve months. Honey crisp apple, rain, stone fruit and a playful citrus refresh and invigorate.
