Aki Queen Macéré Sparkling, Dom. Tetta - 2021

This dry, pét nat-style sparkling Japanese rosé comes from Okayama prefecture in the south. Winemaking in Japan took off as a means for production of tartaric acid, but these days a nascent wine scene has emerged. Its tannic structure comes from 3 weeks on the skins, and carbonic fermentation was used. Pair this aromatic and fruit-forward sparkler with white fish poached in miso and shoyu.

Another beauty from Domaine Tetta in Okayama, Japan! This time, we have a popular Japanese table grape known as Aki Queen, which is a light colored red grape known for its large berries and delicious flavor. When crafted into a Pétillant Naturel, the aromas and flavors nearly explode out of the glass! Domaine Tetta has a way of capturing nuances in a wine that I find quite remarkable. This wine in particular brings forth the combination of perfectly ripe strawberries, wild mint, and the juiciest guavas you can imagine. The use of whole cluster carbonic maceration definitely helps bring forth these notes at a heightened level, as does the avoidance of sulfites. Ultimately, this wine is downright delicious, and also quite a joy to ponder. Don’t forget about the Queen for your next dinner party!
