Aligoté from the lieu-dit of Aux Boutières in Savigny-lès-Beaune is planted on clay, limestone, and marl soils. The fruit is direct pressed, and fermentation lasts 2 months in neutral barrel, then aged in barrel for 9 months. Traditional yet natural in style, this is crafted by a Japanese expat who has made Burgundy home. Pair chicken braised in shoyu and mirin.

Aligoté

The "other" white grape of Burgundy, Aligoté plays a struggling second fiddle to the regal white grape of the region, Chardonnay. Older Aligoté vines have been known to produce wines of high quality, displaying lovely citrusy and at times nutty characteristics - but even so, the remaining plantings of the grape are fast being uprooted to make even more space for the cultivation of Chardonnay.
