Cheverny Rouge, Clos du Tue-Boeuf - 2021

A difficult growing season with diminished yields forced the estate to blend their 3 different parcels, Rouillon, Caillères and Gravotte, into this Cheverny Rouge. Mostly Pinot Noir with a touch of Gamay, this dry red was fermented semi-carbonically in large open oak tanks. The wine aged in demi-muids for 8 months before bottling. Pair with roast pork in arbol and agave sauce.
