Emilia Romagna is famous for its Prosciutto, Parmigiano Reggiano, and Lambrusco. Recently, it has been a haven for a new generation of natural winemakers. Federico Orsi was born in Bologna, was raised in Brazil, and returned to Bologna to study finance. His passion for wine pushed him change course and purchase Vignetto San Vito. He immediately converted to biodynamic farming. Here he grows the Grechetto grapes for his Pignoletto. The wine is aged for 6 months on the lees. The wine is not disgorged, leaving a good amount of sediment. This gives the wine a cloudy deep gold complexion and a dense, grainy texture which weighs on the palate. It is packed with flavors of poached pears, golden raisins, and straw. Beneath the dense clouds lies a gravel like minerality. Stunning next to a washed rind double cream cheese like Red Hawk.
