Terrevive produces sparkling Pignoletto in a rich, yet high-acid style. It is focused on citrus aromas, yet possesses a richness and medium body. The estate is a completely biodynamic operation, and vineyards cover just about a third of the farm's acreage. Dry and mouthwatering, this calls for some salumi, cheese, and olives.

Terrevive, the sparkling wine project of Gianluca Bergianti based in Emilia-Romagana, is all about defying expectations and worn-down wine norms. Never employing dosage results in wines of considerable dryness, and crucially, he eschews the "tank method", instead favoring a more traditional practice of adding grape must to the wine for its secondary fermentation in bottle. The difference is all in the texture, and there's loads of it. This bottling, made from the regional grape Pignoletto, is improbably named for actor Steve Zahn, but behind the goofy facade is a serious and deeply convincing sparkling wine. It's like fresh green apple on toast. Just don't tell anyone it's for lunch.
